Well , it ’s happened again . Even though I made a discrete effort to eat , cook and give away my stockpile ofgardengoodness , I ’m clipping the new springchardandspinachbefore the packet I freeze are all used up . I have final bags of garlic still “ perfuming ” my pantry , and if they could , the Mason jars would level at the calendar and say , “ Ahem . ” Our pepper plant life are germinating , apple treesare blooming and , well , it ’s just time to consume those delicateberries , even though we wo n’t forgather the 2012 crop here until June .
So I ’m brainstorming . Here are 10 particular I ’m pushing to utilize up . I ’ve made suggestions on how to enjoy them before more smart youthful thing pop up to replace them , but I ’d welcome any others you have , Dear Readers .

Applesauce : muffins , patty or with the breakfast yoghourt . Pesto ( basil or other herbs):on parched Gallus gallus , in centre loaf , mix into crushed tomatoes ( or your own canned one ) to sauce an easy lasagnaGarlic : cloves slipped under a roast chicken ’s hide , whole heads blackguard to become a spread mixed witholive oiland saltGreens : savory pastries of any sort : Grecian panache , empanadas , and strudelBerries : shortcake , on ice emollient , with Gallic toastDiced peppers : chile , veg orcon carne , pureed soup with broth and creamSauerkraut : always with sausage and sandwichesJam : jam prostitute or oatmeal pickle barPickled veggie : also with sandwich ( particularly cold meat or liverwurst ) or as cocktail nibblesRelishes : on hot dogs , of path , but also in kernel loaf of bread , salad dressings , in any sandwich filling that also uses mayo ( i.e. tuna fish , orchis salad , etc . )
And this is one of the quickest , easiest ways to use up any kind of herbaceous plant pesto . The little muffins are not bad served with tomato soup or minestrone . Of naturally you may make 12 normal muffins too or even an 8×8 pan ofcorn bread . They ’ll both take a footling longer to bake , perhaps 20 to 25 hour .
Recipe: Pesto Corn Bread Mini Muffins

Mix together the dry constituent . Beat together the milk , egg and pesto . If your pesto is on the wry side , you might tally another tablespoon of Olea europaea oil . commingle the wet and dry commixture . Splash in a snatch more milk if it ’s much too dry . fossil oil a mini - muffin pan and fill with generous teaspoon of slugger . Bake at 400 Fahrenheit for 12 to 18 min .
Optional : Add 3/4 cupful corn kernels to the batter or 3 tablespoons minced , oil - packed sun - dry out tomatoes .
